Royal Icing Recipe

Ingredients:

  • 3 tablespoons meringue powder
  • 4 cups (about 1 lb.) confectioners' sugar
  • 6 tablespoons warm water

Instructions:

  1. In a grease-free bowl, beat all ingredients until stiff peaks form:
    • Heavy-duty mixer: 7-10 minutes on low speed
    • Hand mixer: 10-12 minutes on high speed
  2. For a thicker icing, reduce water by 1 tablespoon.
  3. To thin for pouring, add 1 teaspoon of water per cup of icing, mixing slowly with a grease-free spoon or spatula. Adjust with ½ teaspoon water as needed.

Ingredients: Icing sugar, albumen, maltodextrin, glucose solids, cream of tartar, tragacanth, vanillin.
