The Extra Fine Blanched Amond Flour by Blue Diamond is perfect for baking. I use it to make muffins and cookies and am always pleased with the results. I store it in the freezer for 6-8 months, withdrawing what I need and keeping in the refrigerator for a day or so before use. The flour is fine, light and makes great baked goods. It's the perfect solution for anyone who can't eat grains.
