This dark brown cocoa powder is very fragrant and less intense than the Extra Brute. It is ideal for flavoring cake batters, dough's, creams and ice creams and sauces, but not suitable for chocolate powder drinks.

About Dutch-Processed: Also known as Alkalized cocoa powder which means it has been treated with an alkali to neutralize its acidic nature. Because it is neutral and therefore will not react with baking soda, it should be used in recipes calling for baking powder; unless there are other acidic ingredients in sufficient quantities used; in order for proper leavening to occur.
