The SIDE EDGER has three functions:
1.To smooth the sides of the cake. 2. To smooth the covered board. 3. To give a clean finish line between the cake and board.
ALL THREE ARE ACHIEVED AT THE SAME TIME.
When smoothing around the sides of the cake, the base plate remains on the board and as this tool is built to a right angle, you will always achieve vertical sides.
